Choc-chip cookie balls - no baking required

I love enjoying a delicious treat every now and then, and when I can find a recipe that is not only scrummy, but also healthy and nutritious too, well that is just a bonus! These delicious protein packed ‘choc-chip cookie balls’ are so incredibly moorish that you should probably double this recipe if you are inviting friends over!

Ingredients:

  • 100 g dark chocolate
  • 1 & 1/2 cups raw cashews
  • 3/4 cup of oats
  • 1/4 cup raw pecans
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 1/2 tsp. Almond extract
  • Pinch of salt

Method:

  1. Combine pecans, cashews and oats in a processor until blended into a fine meal.
  2. Add the wet mixture to the meal in a large bowl and combine until it forms a soft dough. Then store in the fridge, whilst you chop the chocolate into tiny ‘choc-chip’ pieces.
  3. Take the dough out of the fridge and mix the choc-chips into it, then roll the dough up into little bite sized balls.
  4. If you can resist eating them all at once, then store them in the fridge to keep them nice and firm
  5. Enjoy!
