I love enjoying a delicious treat every now and then, and when I can find a recipe that is not only scrummy, but also healthy and nutritious too, well that is just a bonus! These delicious protein packed ‘choc-chip cookie balls’ are so incredibly moorish that you should probably double this recipe if you are inviting friends over!
- 100 g dark chocolate
- 1 & 1/2 cups raw cashews
- 3/4 cup of oats
- 1/4 cup raw pecans
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 1/2 tsp. Almond extract
- Pinch of salt
- Combine pecans, cashews and oats in a processor until blended into a fine meal.
- Add the wet mixture to the meal in a large bowl and combine until it forms a soft dough. Then store in the fridge, whilst you chop the chocolate into tiny ‘choc-chip’ pieces.
- Take the dough out of the fridge and mix the choc-chips into it, then roll the dough up into little bite sized balls.
- If you can resist eating them all at once, then store them in the fridge to keep them nice and firm
