As a person who lives with a gluten intolerance, I am always trying new alternatives to wheat based flours. Almonds are a remarkable nut, not only can they be used to make a delicious dairy free milk (and quite easily too!), they also make a healthy alternative to flour. Almond flour has a nutty sweet flavour that makes it popular in baked goods, such as gluten free cake, however, it is also fantastic in many savoury dishes too!

The process almonds go through in order to become almond flour, is actually quite simple. First, they are blanched in boiling water so that the soft skins (the outside coating that gives them that brown colour) can be removed, then they are ground up into a powder. Simple! Almond meal is another option that is made leaving the skins of the almonds on. Though it is also delicious, it doesn’t make as fine a powder as almond flour does, therefore isn’t always the ideal flour substitute.
