I discovered this neat little party food at a friends BBQ the other day and thought I would share it. Not only do these salad cups use avocados, which are basically miniature powerhouses of nutrients, they also utilise the skins as mini bowls, helping save on cleaning efforts and the environment!

You can use any salad materials to create your avocado salad cups, however, I thought I would share the two that I tried. I hope you enjoy them as much as I did!

Strawberry & Pine Nut - Avocado Cup

These recipes make enough for two cups each, you can adjust the recipe depending on how many guests you have.

Ingredients:

  • 1 large ripe avocado
  • 3 ripe strawberries
  • 3 Sweet basil leaves
  • 1/2 Tbsp. Roasted pine nuts
  • 1/4 fresh lime

Method:

  1. Slice you avocado in half, lengthways and carefully remove the seed.
  2. Use a spoon to scoop out the avocado, trying not to mush it too much or damage the skin. Set the skins aside.
  3. Slice the avocado into bite sized chunks and then place in a small mixing bowl.
  4. Wash and de-stem the strawberries before slicing into quarters and adding to the avocado.
  5. Tear up the basil leaves and add them, along with the roasted pine nuts to the rest of the salad.
  6. Squeeze the lime juice over the salad and gently combine before dividing it between the two avocado shells
  7. Serve and enjoy!

Hazelnut & Rocket -Avocado Cup

Ingredients:

  • 1 ripe avocado
  • Small handful of rocket
  • 1/2 Tbsp. Crushed hazelnuts
  • 1/4 small red capsicum, sliced thinly
  • 1/4 fresh lime
  • Salt and pepper to taste

Method:

  1. Slice you avocado in half, lengthways and carefully remove the seed.
  2. Use a spoon to scoop out the avocado, trying not to mash it too much or damage the skin. Set the skins aside.
  3. Slice the avocado into bite sized chunks and then place in a small mixing bowl.
  4. Add capsicum, rocket, hazelnuts and the lime juice. Season with salt and pepper (optional) then toss gently until well combined.
  5. Divide between the two avocado shells, then serve and enjoy!
